Imagine that you are hosting a dinner party. As host/hostess, you want the conversation to be interesting, but you also want to know more about these individuals – essentially your heroes. Who would you invite and why? You are limited to three places at the table other than yourself (i.e., three guests). In the early fifteenth century, the early Ming emperors showed an unusual amount of inquisitiveness about the world around them through sponsoring a series of voyages. In the following forum, discuss the reasons for and logistics of these voyages and engage in a bit of alternative History. What could the early modern world possibly have looked like if the Ming had not withdrawn back within the Chinese mainland?

There are two parts to this assignment. The first is to describe the Ming voyages. The second is to speculate on how the continuation of the voyages might have changed world development.

Changing pace a little, the focus of this discussion will be focused more on food service at an event as well as food service overall. The posed question is related to the ethics and social responsibility of the food providers, event planners, and service managers.

Acknowledging commercial foodservice operations are only meeting demand, is there a moral, social, and/or ethical responsibility for noncommercial operations or event vendors to ensure a high-quality, balanced diet or nutritional meal is offered? Is this a primary attribute of the overall strategy of providing sustenance? Is the nutritional value or benefit of a meal a burden the food service operation should carry or should that burden be left to the needs of the client or the wants of the consumer? For your discussion, provide contrasting examples to demonstrate different moral, social, or ethical practices.

Nearly as many restaurants in existence are the same as how many variants of a service culture there are. We will explore this to set the stage for the discussion next week.

An important aspect of identifying standards used to appraise performance is identifying and understanding the norms and values of the organizational culture you want to cultivate and sustain. An operation focused on speed and efficiency might have a different culture than an operation focused on social interaction and quality. There might be some overlap in expectations related to hospitality, but the steps of service and critical failures might be different.

For your extra credit discussion this week, you will discuss the culture of your food service operation. Identify and explain the norms and values of your operation and how they will express and sustain the desired culture. What will make the operation unique and yours?

For full credit, your discussion must address one aspect of human resources and one aspect of performance management, which can be policies or strategies.

· Human Resources would be anything cultivating culture or conveying acceptable behaviors and actions within the organizational culture.

· Performance Management would be anything related to monitoring and adjusting demonstrated behaviors and actions to fit within the organizational culture or align with organizational goals.
